This always reminds me of the Islands with the sweet potato and carrot. It is pretty spicy, so adjust accordingly!!

Recipe Ingredients for Black bean Vegetarian Chili

2 cloves garlic, minced
1 small onion, diced
1 lb sweet potatoes, peeled and chopped
2 medium carrots, sliced
2 tbsp olive oil
15 ounce black beans
15 ounce diced tomatoes or tomato sauce
1/2 cup vegetable broth
1 tbsp chili powder
1 tsp cumin
1/2 tsp cayenne (or to taste)
1/2 tsp garlic powder
1/4 tsp black pepper

Recipe Directions for Black bean Vegetarian Chili

  1. Sautee onions and garlic in olive oil for a minute or two, then add sweet potatoes, carrots and bell pepper until onions are soft, about 5-6 minutes.

  2. Reduce heat to medium low, and add remaining ingredients, stirring to combine well.

  3. Simmer, partially covered and stirring occasionally, for 20-25 minutes, until flavors have mingled and vegetables are cooked.
