Recipe Ingredients for Black bean vegetarian chili

2 cloves garlic, minced
1 small onion, diced
2 sweetpotato,+5"+long peeled and chopped [11507] 2 small sweetpotatoes
2 medium carrots, sliced
1/2 red bell pepper, chopped
2 tbsp olive oil
15 oz Bush's black beans
15 oz diced tomatoes
1/2 cup vegetable broth
1 tbsp chili powder
1 tsp cumin
1/2 tsp cayenne
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper

Recipe Directions for Black bean vegetarian chili

  1. Sautee onions and garlic in olive oil for a minute or two, then add sweet potatoes, carrots and bell pepper until onions are soft, about 5-6 minutes.

  2. Reduce heat to medium low, and add remaining ingredients, stirring to combine well.

  3. Simmer, partially covered and stirring occasionally, for 20-25 minutes, until flavors have mingled and vegetables are cooked.
