This hearty vegetable soup is a great way to use up left over wild rice. Serves 3

Recipe Ingredients for Black Bean Vegetable Soup

2 cup Chicken Stock
1 cup Wild Rice, Cooked
0.25 cup Vegetables, Mixed
0.5 cup, sliced Squash, Summer, Crookneck And Straightneck
0.5 cup, pieces or slices Mushrooms
14.5 oz Black Beans
0.5 cup, diced Celery

Recipe Directions for Black Bean Vegetable Soup

  1. Pour chicken stock to medium soup pot. Add diced celery. Simmer five to ten minutes or until celery is soft. Add the rest of ingredients. Simmer until squash is tender. Approx. 7 more min.

  2. Cool and serve.
