Recipe Ingredients for Black Bean Vegetable Dip

1/2 cup extra virgin olive oil
1/4 cup champagne vinegar
1/4 cup white vinegar
1/2 cup sugar
2 garlic cloves, minced
1 tsp. salt
1/4 tsp. black pepper
15 oz. can black beans, drained & rinsed
15 oz. can chickpeas, drained, rinsed and steamed in the microwave for 2 min
1/2 large white onion, finely chopped
2 Roma tomatoes, seeded & chopped
1/2 cup celery, chopped

Recipe Directions for Black Bean Vegetable Dip

  1. Bring oil, vinegars, sugar, salt, garlic, and pepper to a boil in a small saucepan. Stir as it boils, until sugar is dissolved. Remove from heat and set aside.

  2. Mix remaining ingredients gently in a medium bowl, then pour in sauce and mix gently.

  3. Refrigerate for 2 hours before serving.
