Nice fall recipe. Easy to make vegetarian with omission of bouillon.

Recipe Ingredients for Black Bean and Tomato Soup

1 teaspoon olive oil
1 medium onion, chopped
1 tablespoon minced garlic
8 ounces hunt's tomato sauce
15 ounces diced tomatoes
15 ounces Black Beans Drained and Rinsed
1 teaspoon chili powder
1 teaspoon cayenne powder
1 cube Bouillon
1 teaspoon chicken bouillon
1/2 tablespoon ground cumin
1 tablespoon Worcestershire
1 tablespoon sriracha
1 1/2 cups water
1/2 cup MEDIUM Salsa
1 teaspoon lime juice
2 tablespoons half and half
3 tablespoons feta cheese
3 tablespoon Veggie Shreds Cheese Food Alternative

Recipe Directions for Black Bean and Tomato Soup

  1. Dice onions and cook alongside garlic in olive oil until tender.

  2. Add all ingredients except lime juice, half & half and cheese. Bring to a boil then simmer for ten minutes.

  3. After ten minutes, add most of the chunky stuff into a blender or vitamix and puree. Stir puree into soup. Add lime juice and half & half.

  4. Garnish bowls with cheese.
