1 cup quinoa, dry 1 can black beans, rinsed 1 small bow sweet cherry tomatoes, diced in half 1 bunch green onions, chopped 1 bunch cilantro, chopped 1 bunch flat parsley, chopped 1 lemon extra virgin olive oil sea salt and pepper to taste

1 cup Quinoa
1 cup Black Beans, Organic
12 oz Sweet Cherry Tomatoes
0.5 cup chopped Green Onions
8 serving, raw Cilantro
0.5 cup Parsley
6 oz Juice
2 tbsp Extra Virgin Olive Oil
1/4 tsp Sea Salt

Recipe Directions for Black Bean Tomato Quinoa Salad

Rinse quinoa under cold running water. Prepare 1 cup dry quinoa with 2 cups liquid (water or broth) to a boil. Reduce heat to medium low. Cook for 15 minutes until liquid is absorbed and the quinoa is tender. Place cooked quinoa in a large bowl and add the black beans. Chop the tomatoes, green onions, cilantro, and dry parsley, add items to the bowl. Squeeze the fresh lemon and pour in the olive oil to coat all ingredients, Add sea salt and pepper to taste and mix it all together!
