Recipe Ingredients for Black Bean and Tomato Quinoa

2 t. grated lime zest
2 T. fresh lime juice
3 T. olive oil
1 t. sugar
1 c. quinoa
15 oz. black beans , rinsed, and drained
2 medium tomatoes, diced
4 scallions, chopped
1/4 c. fresh chopped cilantro

Recipe Directions for Black Bean and Tomato Quinoa

  1. Whisk together lime zest and juice, oil, 1/2 t. salt, and 1/4 t. pepper in large bowl.

  2. Wash quinoa in three changes of cold water and cook according to package directions (or seriouseats.com has a method as well).

  3. Add quinoa to dressing and toss until dressing is absorbed, then stir in remaining ingredients; salt and pepper to taste.
