Experimental salad. This salad is very adjustable in terms of ingredients. Try experimenting by adding or removing ingredients until you find your desired recipe.

Recipe Ingredients for Black Bean, Tomato and Corn Salad

15 1/2 oz canned Black Beans
15 1/2 oz canned Corn (or fresh corn)
2 Tomatoes, diced
1 cup Onion, diced
1/4 cup Extra-Virgin Olive Oil
1/4 cup Lemon or Lime juice
1 red Pepper, diced

Recipe Directions for Black Bean, Tomato and Corn Salad

  1. Strain and rinse the canned black beans and corn. Dump into large bowl.

  2. Dice the amount desired of tomatoes, onion and pepper and dump into the bowl with the black beans and corn.

  3. Pour extra-virgin olive oil and lemon or lime juice into bowl.

  4. Mix well and serve.
