This recipe was found in Seventeen Magazine. It was adapted from "College Vegetarian Cooking: Feed Yourself and Your Friends". It is not my own recipe, and I do not claim it.

Recipe Ingredients for Black Bean Tacos

1/2 c light sour cream
4 ounce green chiles
15 ounce black beans
15 ounce corn
1 T chili powder
8 corn tortillas
1 1/2 c shredded lettuce
1 c grated cheddar cheese

Recipe Directions for Black Bean Tacos

  1. Combine sour cream and green chiles in a small bowl and set aside.

  2. Drain beans rinse under cold water, and place in small saucepan.

  3. Add corn (with liquid) to beans in saucepan and cook over medium-low heat, stirring for 8 to 10 minutes. Drain liquid and stir in chili powder.

  4. Spoon bean mixture onto the center of a tortilla, then top with lettuce, cheese, and sour cream sauce. Repeat with the remaining tortillas.
