Recipe Ingredients for Black Bean, Sweet Potato, Tofu, and Spinach Burrito Filling

30 oz black beans , rinsed
15 oz tofu, 1/2" cube
2 lbs spinach, rinsed, chopped
1 large onion, diced
1 small red bell pepper, diced
2 lb sweet potatoes, 1/4" cubes
2 T canola oil
1 T chili powder
2 T cumin
1 T tamari
1 T balsamic vinegar

Recipe Directions for Black Bean, Sweet Potato, Tofu, and Spinach Burrito Filling

  1. Heat the oil in a heavy pan over medium heat. Add onion and cook until translucent.

  2. Add chili powder and cumin, stir, and cook for 1 minute.

  3. Add sweet potatoes, combine, and cook for 7min.

  4. Add tofu, combine, and cook for 4 min.

  5. Add black beans, tamari, and vinegar, combine, and cook for 2 min.

  6. Add spinach until desired wilt.

  7. Fill tortillas for burrito.
