Recipe Ingredients for black bean and sweet potato enchiladas

2 cup, cubes Yam
1 cup Jalepeno Black Beans w/ Lime Juice
1 cup chopped Red Onion
28 oz Old El Paso Sauce Enchilada Medium
3 1/2 serving Diced Tomatoes with Basil Garlic and Oregano
4 oz Diced Green Chilies
6 tortilla 8" Premium Flour tortilla 8ct
1 cup, shredded Cheddar Cheese
1 tbsp Vegetable Oil

Recipe Directions for black bean and sweet potato enchiladas

  1. preheat oven 350 degrees. coat 13/9 baking dish with nonstick cooking spray.

  2. cook sweet potatoes (yams) by boiling them and cut them in chunks

  3. when they are finished, put them in a pan with onions and add some vegetable oil.

  4. when the onions are soft, add black beans, tomatoes, and chilies.

  5. in a separate bowl combine the 1 can of enchilada sauce with 1 teaspoon cumin and 1 teaspoon pumpkin pie spice.

  6. coat the bottom of the baking dish with enough of the sauce to just coat it.

  7. then make the enchiladas and put it in the dish

  8. pour the rest of the sauce over the top and add cheese if you want.

  9. cook in oven until they look done. 1 serving = 1 enchilada
