Recipe Ingredients for Black Bean & Sweet Potato Enchiladas

2 teaspoons olive oil
1 small onion, diced
2 1/2 cups sweet potatoes, diced
2 cups black beans
2 cups spinach, chopped
2 cups Enchilada sauce
4 ozs. sour cream, reduced fat
4 ozs. cream cheese, reduced fat

Recipe Directions for Black Bean & Sweet Potato Enchiladas

  1. Preheat oven to 375. Heat oil in skillet. Add onion and saute 5 - 10 minutes. Add sweet potatoes. Cover and cook about 10 minutes until tender. Stir in beans and spinach. Cover and heat about 5 minutes until greens are wilted.

  2. Cover bottom of 9 x 13 pan with 1/3 cup Enchilada sauce. Place tortilla on a flat surface. Scoop filling across to tortilla and some cream cheese and sour cream and wrap up. Place in pan with seam on bottom. Cover enchiladas with remaining sauce, cover pan and bake 20 minutes.
