Vegetarian chili made with black beans and sweet potato.

Recipe Ingredients for Black bean/sweet potato chili

1 tbsp Extra Virgin Olive Oil
1 large sweet potato, peeled and diced
1 large onion, diced
4 garlic cloves, minced
2 tbsp chili powder
4 tsp ground cumin
1/2 tsp Chili Seasoning
1/4 tsp salt
2 c. water
30 oz g) (15 oz.) black beans, rinsed
1 (canned tomatoes g) (14 oz) diced tomatoes
4 tsp. lime juice
1/2 c chopped fresh cilantro

Recipe Directions for Black bean/sweet potato chili

Heat oil in large pan. Saute onion and sweet potato 4 minutes. Add garlic, chili powder, cumin, chipotle, salt and water. Cover, simmer 12 minutes till sweet potato is soft. Add beans, tomatoes, lime juice. Simmer uncovered until slightly reduced. Add cilantro.
