A hearty, spicy chili. Black beans and sweet potatoes just go together.

Recipe Ingredients for Black bean & Sweet potato chili

1 med onion, chopped
1 med bell pepper, chopped
2 cloves garlic, minced
1 jalapeno pepper, minced
2 cups sweet potato, diced
30 oz diced tomatoes
4 cups canned black beans, rinsed and drained
2 tsp chili powder
1 tsp cumin
1 Cilantro for garnish

Recipe Directions for Black bean & Sweet potato chili

  1. Chop the onion and bell pepper, place in a heavy-bottom pot along with the garlic and jalapeno and a small amount of water.

  2. Sweat down the vegetables until the onions are soft.

  3. Add the chili powder and cumin and stir in.

  4. Add the sweet potatoes, corn and tomatoes and bring to a simmer. Simmer about 30 minutes or until sweet potatoes are soft.

  5. Add water as necessary to maitain consistency.

  6. Add the black beans, bring back to simmer, and cook for about 15 minutes to allow the beans to heat through, and allow flavors to blend. Adjust seasonings to desired heat.

  7. Salt and pepper to taste.

  8. Serve over rice, cooked according to package directions.

  9. Sprinkle cilantro over top (optional)
