lovely with a crispy green salad. 500 grams sweet potatoes is about 3 medium potatoes.

Recipe Ingredients for Black Bean Sweet Potato Cakes

500 grams sweet potatoes, raw
1 1/2 cup cooked black beans
1/4 green onions, chopped
1 T cilantro, chopped
2 medium eggs
1/8 t salt
1/4 t black pepper
2 T canola oil

Recipe Directions for Black Bean Sweet Potato Cakes

  1. peel and greate potatoes

  2. Pre-heat oven to 250 F

  3. Combine potatoes, beans, green opnions (or chives) and cilantro in large mixing bowl.

  4. Lightly beat eggs and add eggs, salt and pepper to taste and mixe well.

  5. Heat 1 T of oil in large griddle or skillet over medium heat. Drop batter by spoon to make pancakes 3 inches in diameter. brown on one side then flip to brown on other. Keep warm in oven while others are cooking.

  6. Makes between 16-20 pancakes. Serve hot.
