Recipe Ingredients for Black Bean and Sweet Potato Burritos

1 tablespoon olive oil
1/2 cup onion, chopped
1 tablespoon garlic, minced
3 tablespoons peanut butter
1 teaspoon cumin
1/2 teaspoon cinnamon
1/4 teaspoon cayenne pepper
3 cups sweet potatoes, cooked
1 cup black beans, cooked and drained

Recipe Directions for Black Bean and Sweet Potato Burritos

  1. Heat oil in a skillet over medium heat. Sauté the garlic and onion a few minutes until tender and onion is translucent.

  2. Stir in peanut butter, sweet potatoes and black beans, mashing slightly. Add in spices and mix well, cooking a few more minutes until all the ingredients are heated through. Stir occassionally to prevent scorching.

  3. [Optional] Serve in warm tortillas and top with salsa, sour cream, onions, and cilantro.
