Black Bean, Squash, and Chard Chili

Recipe Ingredients for Black Bean, Squash, and Chard Chili

1 tsp olive oil
4 ounces onions, diced
2 cloves garlic, minced
8 ounces acorn squash or butternut squash, peeled and cut to 1/2 inch cubes
1 tbsp chili powder
1 tsp cumin
15 1/2 ounces black beans
1 cup stock or broth
14 ounces whole tomatoes, crushed
6 ounces kale

Recipe Directions for Black Bean, Squash, and Chard Chili

  1. Heat oil in heavy large pot over medium-high heat. Add onions and garlic; sauté until tender and golden.

  2. Add squash; stir 2 minutes. Stir in chili powder and cumin. Stir in beans, broth, and tomatoes with juices; bring to boil. Reduce heat and simmer, uncovered, until squash is tender, about 15 minutes.

  3. Stir in chard; simmer until chard is tender but still bright green, about 4 minutes longer.

  4. Season to taste with salt and pepper. Ladle chili into bowls and serve, topped with cheese.
