Vegetarian lasagna, Spinach is my new favorite in lasagna.

Recipe Ingredients for Black Bean Spinach Lasagna

1 pound pasta
8 oz tomato sauce
16 oz can diced tomatoes
8 oz grated mozzarella cheese
16 oz black beans
10 oz spinach

Recipe Directions for Black Bean Spinach Lasagna

  1. Boil lasagna as directed on box

  2. Sautee spinach in a small amount of oil

  3. Arrange a layer of noodles on bottom of pan

  4. Mix tomato sauce, tomatoes, spinach, and beans and most of cheese in a bowl, add 1/3 mixture over noodles.

  5. Repeat layers until ingredients are gone, add remaining cheese on top,

  6. Bake at 350 for about 30 minutes or until cheese melts through.
