Black bean and spinach filler with onion, monterey jack cheese and ricotta.

Recipe Ingredients for Black Bean and Spinach Lasagna

2 large eggs, lightly beaten
15 ounce ricotta cheese
16 ounce frozen chopped spinach, thawed and well drained
1/4 cup chopped onion
1/2 teaspoon salt
16 oz Monterey Jack cheese
32 oz black beans, rinsed and drained
16 oz tomato sauce
8 oz pasta

Recipe Directions for Black Bean and Spinach Lasagna

  1. Mix together eggs, ricotta, and salt in one bowl. In a similar bowl mix spinach, lightly smashed black beans and onion.

  2. In casserole dish, add alternating layers of beans, cheese, sauce, and lasagna noodles until finished.

  3. Sprinkle half jack cheese on top with 2 tsp basil.

  4. Bake at 350 for 1 hour, covered in aluminum foil.

  5. Uncover after hour and add remaining cheese. Bake an additional 10-15 minutes until lasagna looks amazing.
