Black bean soup. Beef bones are not calculate-able so I said 1/4 beef as a guess/estimate. If you want to make this a vegan recipe, substitute the beef bones with a container of vegetable broth for flavor.

Recipe Ingredients for Black Bean Soup, with vegan option

1 pound black beans
1/4 pound beef (1 pound beef bones)
3 red peppers
2 medium onions
2 carrots
2 stalks celery
3 tbs garlic
2 tbs olive oil
2 tsp salt
1 tbs pepper
1 tbs oregano
1 tbs chili powder
2 tbs parsley
1 tsp cayenne pepper

Recipe Directions for Black Bean Soup, with vegan option

  1. cook garlic and onion first in olive oil and salt

  2. add carrots and celery, cook for 5 more minutes

  3. add peppers, cook another 5 minutes

  4. add rest of ingredients, cook for 2-4 hours
