Black Bean Soup/Topping mix with either brown rice or put on top of tostado

Recipe Ingredients for Black Bean Soup/Topping

16 oz can black beans
10 oz Ro*tel original
1 medium onion, chopped
1/2 tsp salt
3 cloves garlic, minced
1 ground black pepper to taste
1 tablespoon cajun seasoning
1 tablespoon olive oil
1 green bell pepper, chopped

Recipe Directions for Black Bean Soup/Topping

  1. Saute onion and green pepper in large skillet with olive oil until soft.

  2. add black beans, rotel, garlice salt, chopped green bell pepper, thyme and cajun seasoning

  3. cook 5 minutes or until mixture is hot or liquid is almost gone
