Recipe Ingredients for Black Bean Soup with Soy Chorizo

112 grams Trader Joe's Soy Chorizo
1 medium (2-1/2" dia) Onions
4 clove Garlic
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
1.764 oz Sherry
6 tsp Cumin
1 tsp, crumbled Bay Leaf
9 oz Black Beans Canned
15 fl oz Organic Vegetable Broth
1 fruit (2" dia) Limes
1/4 cup Coriander Leaves
0.13 tsp Salt, Table
0.13 tsp Pepper, Black

Recipe Directions for Black Bean Soup with Soy Chorizo

  1. Discard chorizo skin. Crmble meat and brown in 12" nonstick skillet for 2 minutes.

  2. Add onion, garlic and peppers. Saute over medium-high heat 5 minutes.

  3. Add sherry, cumin, bay leaf, beans and broth.

  4. Cover and cook on low for 4 to 5 hours.

  5. Remove lid and scoop out 1 cup beans and press with back of a fork to mash and return to pot.

  6. Add lime juice, cilantro, salt and pepper.

  7. Simmer uncovered to warm through.
