A simple soup that is Yummy and filling, all you need is the blender

Recipe Ingredients for Black Bean Soup with Roasted Vegatable

3 cups black beans, cooked
8 cups vegetable broth
3 tbsp canola oil
1 tsp salt
1 tsp pepper
1 large onion
8 cloves of garlic
1 large yellow bell pepper
1 tsp chili powder

Recipe Directions for Black Bean Soup with Roasted Vegatable

  1. Cook beans or rinse canned beans

  2. Cook in Vegetable stock until beans are soft

  3. Mean while drizzle the Onion, Garlic and Pepper with oil and broil for about 10min

  4. Put beans and stock into blender and puree

  5. Add the roasted veggies and blend

  6. Add chili powder and pour back into pot to heat up

  7. Serve with Baked Tortillas or Whole grain bread
