Great low calorie high fiber soup. A dash of Tobasco gives it a nice kick.

Recipe Ingredients for Black Bean Soup

1 1tsp Olive Oil
1 large(150 g) Onions
3 tbsp Chili Powder
2 serving Black Beans, 50% Less Sodium (Sunny Select)
8 oz Mild Salsa
3 fl oz Lime Juice, Canned Or Bottled, Unsweetened
1 serving Tomato, Paste, (Sunny Select)
32 oz Water
1/4 tsp Salt, Table
252 grams Mushrooms

Recipe Directions for Black Bean Soup

  1. Saute onion and mushroom in olive oil until onion becomes translucent. Add seasoning and water.

  2. Add beans, salt and salsa.

  3. bring to a boil, then cook on medium heat for 20-30 minutes.

  4. Blend hallf of the soup in a blender to thicken.

  5. Add lime juice after cooking.

  6. Makes five 15.50oz servings.
