Recipe Ingredients for black bean soup

1 tbsp vegetable oil
1 cup black beans
4 cloves garlic
1 carrot
1/2 onion
2 stalks celery
1/2 tsp dried oregano
1/4 tsp ground cumin
1 pinch salt
1 pinch pepper
1/4 cup cilantro
3 cups water

Recipe Directions for black bean soup

  1. Dice vegetables

  2. Saute onions in oil, add vegetables and all spices

  3. Stir fry for a few moments until soft

  4. Add beans and water, stir in making sure to scrap all dried bits off the bottom and sides of pan

  5. Cook on low for about 20 minutes

  6. Puree in batches in blender until smooth

  7. Serve with 1/4 cup of yoghurt on top
