Recipe Ingredients for Black Bean Soup

1 cup black beans, rinsed and drained
1 onion, chopped
2 cloves garlic, chopped
1 green bell pepper, chopped
7 cups water
1 teaspoon olive oil
1/4 tsp salt
1/4 tsp ground black pepper
1/8 teaspoon ground cumin

Recipe Directions for Black Bean Soup

  1. Rinse and soak beans according to package directions.

  2. In a Dutch Oven saute onion, garlic and green pepper in oil over medium heat till tender.

  3. Add beans and water and season with salt, pepper and cumin to your desired taste. Mix well, bring to boil, reduce heat and simmer for 25 minutes.

  4. Pour soup into blender and puree. Once soup is to your desired consistency return to Dutch Oven and return to medium-low heat.
