Thick and savory with a bit of a kick!

Recipe Ingredients for Black Bean Soup

45 oz black beans
1 cup chopped carrots
1 vidalia onion, chopped
10 oz salsa
10 1/2 oz chicken broth
1 tsp minced garlic
1 tsp salt
1 tbsp chili powder
1 tbsp ground cumin

Recipe Directions for Black Bean Soup

  1. Saute carrots and onions and garlic in 1 tbsp EVOO.

  2. Puree sauteed veggies with tomatoes and a little bit of chicken broth - leave a little chunky

  3. rinse the black beans and puree with chicken broth - leave a little chunky

  4. mix all together in a put and simmer on low for half and hour

  5. add in cumin, salt, and chili powder

  6. **normally use a can of diced tomatoes w/ green chillis instead of salsa and usually have celery in with the veggies too but had to improvise this time@!
