Adapted from The Healthy Kitchen to use canned black beans. Serve with low-fat shredded cheddar and non-fat sour cream for toppers.

Recipe Ingredients for Black Bean Soup

2 1/2 cup Black Beans
1 tsp Olive Oil
1 clove Garlic
1/2 large Onions
1 pepper Peppers, Jalapeno
1 pepper Peppers, Hot Chili, Green
1/2 yellow bell pepper
1 1/2 cups chicken broth
1/2 cup Coriander Leaves

Recipe Directions for Black Bean Soup

  1. Heat the olive oil in a large pot, Saute the onions, peppers and garlic in the oil until soft.

  2. Place the beans in a blender, along with about a cup of the chicken broth. Blend until mostly smooth -- you want some chunks.

  3. Add to the peppers and onion, along with as much chicken broth to make the soup the consistency you like.

  4. Add the cilantro, and cook a few minutes more.
