A ginger-spicy hearty black bean soup loaded with fiber and protein.

Recipe Ingredients for Black Bean Soup

4 cups chicken broth
24 ounce black beans, rinsed and drained
2 carrots, chopped
1 onion, chopped
1 tsp. cumin, ground
1 tsp. ginger, fresh chopped
1 tsp. black pepper
1/8 tsp. salt
1/2 c. parsley, chopped

Recipe Directions for Black Bean Soup

Add broth, beans, carrots, onion, cumin, ginger, pepper, and salt to a soup pot and bring to a boil. Reduce heat and simmer for 60 minutes. Sprinkle individual servings with parsley before serving.
