Recipe Ingredients for Black Bean Soup

2 tablespoons olive oil
2 teaspoons (2 cloves) garlic
3 carrots
1 large onion
2 cups black beans (2 15 oz cans)
1 cup chicken broth
1 tablespoon splenda brown sugar blend
1 teaspoon cumin
1 teaspoon oregano
2 teaspoons bay leaves (2 leaves)
3 oz adobo (1 packet)
1 tablespoon white vinegar

Recipe Directions for Black Bean Soup

  1. Heat oil in pot over med-high heat. Add garlic & all seasonings - saute about 30 seconds.

  2. Add vegetables & saute, stirring frequently, about 10 minutes or till tender.

  3. Add broth, beans, sugar, & vinegar - bring to a boil.

  4. Reduce heat to low and simmer, uncovered about 15 minutes or until soup thickens. Remove bay leaves before serving.

  5. Add salt & pepper to taste. Add toppings to taste.
