Black Bean Soup can also be served over rice. Easily made into a vegetarian dish by exchanging chicken broth for vegetable broth.

Recipe Ingredients for Black Bean Soup

2 1/2 cups black beans, dry
1 tablespoon olive oil
2 onions, chopped
6 stalks celery, chopped
8 cups chicken broth
1/2 teaspoon cayenne pepper, ground
1 1/2 teaspoons cumin, ground
2 tablespoons balsamic vinegar
1/4 cup wine, sherry
1 tablespoon soy sauce
1/2 teaspoon ground black pepper

Recipe Directions for Black Bean Soup

  1. rinse, pick through and cover black beans with two inches of water

  2. The next day slowly cook onions garlic and celery in olive oil.

  3. Rinse soaked beans and add to pot with vegetables

  4. Add broth and two cups of water and bring to boil then simmer

  5. stir in cumin and cayenne

  6. Simmer for 2 - 2 1/2 hours

  7. just before removing from the heat add vinegar, sherry, soy sauce and pepper
