Bean and corn soup - NOTE : you actually use 2 cans drained black beans, for some reason the recipe analyzer wouldn't give me the right amount of calories, but I figured it on paper, and this is very, very close.

Recipe Ingredients for Black bean soup

1 cup black beans
2 1/2 cups frozen corn
2 carrots
1 onion
1 bell pepper
1 celery stalk
2 tbsp garlic
1 jalapeno pepper
15 oz diced tomatoes

Recipe Directions for Black bean soup

  1. Chop veggies and saute until translucent.

  2. Add drained beans and tomatoes and frozen corn.

  3. cover with chicken broth and simmer for 30 minutes.
