Vegetarian black bean soup made from pantry staples.

Recipe Ingredients for Black Bean Soup

2 cloves garlic
1 tbsp olive oil
1 liter vegetable broth
2 medium potatoes, diced
1 sweet potato, diced
2 cups black beans, canned
12 oz corn
1 pinch of hot red pepper flakes

Recipe Directions for Black Bean Soup

  1. (I use yam, not sweet potato.)

  2. Mince garlic. In a medium soup pot, saute garlic with potatoes for a few minutes. Add broth, yam, black beans and corn. Add pepper flakes (and any herbs you desire). Cook until yams and potatoes are tender (15-20 minutes).

  3. Serve with a good dark bakery bread. Top each serving with sour cream if you're not dieting!
