add all the veggies you want! zucchini, cilantro, corn, just about anything. calls for canned beans, makes a much quicker meal, but for some reason i cant enter them in. You need 30 oz of cooked beans.

Recipe Ingredients for black bean soup

1 onion, finely chopped
2 garlic cloves, minced
1 cup celery, finely chopped
1 cup carrots
1/2 large red bell pepper, finely chopped
14 oz diced tomatoes
1 1/2 cup water, boiling
2 cups black beans
1/2 teaspoon salt
1/2 teaspoon cumin
1/4 cup lemon juice
1 1/2 tablespoons cornstarch

Recipe Directions for black bean soup

  1. In a pot, combine the first six ingredients; simmer for 10 minutes.

  2. 2Add half a can of beans, salt and cumin; cook for 5 minutes.

  3. 3Puree soup (I use an immersion blender which makes it easy to do it right in the pot).

  4. 4Add the rest of the beans to the soup.

  5. 5Combine the cornstarch with 1 1/2 tablespoons of water.

  6. 6Add the lemon and the cornstarch to the soup; cook until thickened.
