Very good, spicy-too hot if use medium salsa. Use 2 cans (15 oz each) black beans, rinsed. Takes about 20 minutes. 1 cup=1 serving.

Recipe Ingredients for Black Bean Soup

3/4 cup celery, chopped
3/4 cup onion, chopped
1 garlic clove
1 tbls canola oil
14 1/2 oz chicken broth, no salt
28 oz water
4 oz black beans, (2 cans rinsed)
16 oz salsa, mild
1 cup chicken breast, cooked, cubed
1 cup cooked rice, long grain
1 tsp cumin

Recipe Directions for Black Bean Soup

In large saucepan, saute celery, onion and garlix in oil until tender. Stir in the remaining ingredients; heat through.
