crock pot recipe, each serving approx 1 cup

Recipe Ingredients for Black Bean Soup

1 tbsp olive oil
2 medium red onions, chopped
1 medium green pepper
1 medium red pepper
4 garlic cloves
4 tsp ground cumin
16 ounce dried black beans
1 tbsp chiles
4 cups vegetable broth
3 cups water
2 tbsp lime juice
2 tsp kosher salt
1/4 tsp black pepper

Recipe Directions for Black Bean Soup

  1. Heat oil and sautee onions and peppers about 8 min.

  2. Add garlic and cumin

  3. Transfer mixture to crock pot.

  4. Add hot beans, chiles and water/broth

  5. Cover and cook for 6 hours.

  6. Transfer 2 cups (i use more) to blender and puree until smooth

  7. Return to slow cooker

  8. Add lime juice, salt and pepper
