Spicy black bean soup with poblanos and jalapenos

Recipe Ingredients for Black Bean Soup

1 lb dried black beans
56 oz low sodium chicken broth
2 poblano peppers
1 jalapeno pepper
2 cups corn
16 oz tomato sauce
1 tbsp canola oil
1 yellow onion
2 tsp cumin
1 1/2 tsp chili powder
1 tsp oregano
3 tbsp lime juice

Recipe Directions for Black Bean Soup

  1. soak beans overnight, drain set aside

  2. chop onion, and peppers

  3. put oil in a pan, add onion and peppers until done

  4. add spices, tomato sauce, chicken broth, and beans

  5. bring to a boil, then reduce to a simmer

  6. simmer for 1 hour

  7. use an immersion blender to blend the soup

  8. add corn and lime juice

  9. serve
