A fast, hearty and heart healthy thick soup that sticks to your ribs. Perfect after a cold day outdoors, before work in the morning or even as a dip at a party

Recipe Ingredients for Black Bean Soup

32 ounces of black beans
10 ounces of canned diced tomatoes
1 cup vegetable broth
1 onion
2 tbsp low sodium taco mix
6 tbsp low fat sour cream

Recipe Directions for Black Bean Soup

Drain both cans of black beans. Mash one can of beans into a paste, then put both cans into a pan. Add one 10 oz can of tomatoes (I prefer Rotel brand with the green chiles. Adds some kick.) and the low sodium taco mix. Add more or less to taste. Dice the onion and saute in a pan with some vegetable broth (I like to add pepper and fresh garlic, but you can season to taste). When the onions are cooked but still firm, combine with the beans. Add broth until it is the desired thickness. Serve with a dollop of low fat sour cream on top.
