Recipe Ingredients for Black Bean Soup

30 oz can black beans
1 cup salsa
15 oz vegetable stock
1 cup raw cabbage

Recipe Directions for Black Bean Soup

  1. Drain liquid from beans and rinse to remove all foam.

  2. Add to medium pot.

  3. Add vegetable stock or water and boullian (about 1/2 the bean can worth)

  4. Mash beans until a thick broth is formed, leaving some beans whole.

  5. Add salsa and spices to taste.

  6. Heat to boil. Simmer a few minutes to infuse flavors.

  7. Serve with chopped cabbage to sprinkle on top. Optionally, top with chips or avocado slices.
