An easy low salt, low fat black bean soup

Recipe Ingredients for Black Bean Soup

3 cups cooked black beans
3 roma tomatoes, chopped
1/2 onion, chopped
3 cloves garlic, chopped
14 1/2 ounces fat free chicken broth
1 cup water
1/4 cup salsa

Recipe Directions for Black Bean Soup

  1. Soak 1.5 cups of black beans in water overnight - will make 3 cups after soaking.

  2. Drain beans, place in crock pot. Add chopped tomatoes, onion, garlic.

  3. Add all remaining ingredients and stir to mix.

  4. Cook on low in the crock pot for about 8 hours.

  5. Allow to cool a bit, puree in food processor or blender.

  6. Note: I actually used low-salt fat-free chicken broth for this recipe but CC couldn't analyze the low-salt portion of the recipe. Sodium per serving for low-salt is 168mg.
