This soup is a good pair with grilled cheese sandwiches

Recipe Ingredients for Black bean soup

2 cups dried black beans
2 onions
6 cloves garlic
1 tbs cumin
6 cups water
1 salt
1 tbs soy sauce
2 tbs lemon juice

Recipe Directions for Black bean soup

  1. soak beans overnight; or use the quick soak method

  2. combine beans, water, diced onion, and diced garlic. Simmer for 1 1/2 hours, or until beans are soft.

  3. Blend using a handheld blender or in batches in a food processor. Return to pot and add cumin, soy sauce, and salt to taste.

  4. Simmer for another 15 minutes. Add lemon juice just before serving.

  5. 1 serving = 1 cup
