A tasty black bean and veggie soup that's full of fiber and protein!

Recipe Ingredients for black bean soup

32 oz smoked turkey legs
16 oz black beans, soaked
1 medium onion, chopped
1 leek, chopped
1 green pepper, chopped
1 cup celery, chopped
1/4 cup garlic, minced
2 medium carrots, diced
3 medium tomatillos, chopped

Recipe Directions for black bean soup

  1. soak beans overnight.

  2. Throw all ingredients into crockpot along with 2 Tb ground cumin and 1 Tb ground ancho pepper along with a sprinkling of aleppo peppers or jalapenos and 6 cups water.

  3. Cook all day.

  4. Before serving, remove turkey legs, remove skin and bones, chop meat and reserve.

  5. Use immersion blender (or ladle soup into blender) to puree most of the solids in the soup.

  6. Now add back meat and season to taste.

  7. Also nice to add ham base at the start of cooking.
