Recipe Ingredients for Black Bean Soup

1 1/2 cup Black Beans
3 tsp Chicken Base
1/2 cup Orange Juice
1 cup, chopped Onions
3 clove Garlic
1 carrot (7-1/2") Carrots
1 stalk, large (11"-12" long) Celery
1/2 medium raw Bell Pepper Green
1 1/2 tsp Cumin
1 tsp Spices Ground Coriander
1/4 tsp Cayenne
1 serving Marie Sharp's Grapefruit Pulp Habanero Pepper Sauce
1/4 tsp Pepper, Black
2 tablespoons olive oil

Recipe Directions for Black Bean Soup

Cook beans according to package directions by soaking overnight or gently simmering for several hours until tender. Chop all vegetables and saute in oil until tender. Add a cup or so of water to pot with beans (depending on how much is left after prepping them), along with the bouillion, orange juice, and all spices. Simmer for a half hour or so, then let cool slightly. Place small batches of the soup in a blender and whirl until smooth, returning to a separate pot after blending. If the consistency is too thick, add water. Reheat soup gently. Serve with fresh chopped cilantro and a dollop of nonfat sour cream, if desired. Note: A vegetarian option can easily be made by substituting vegetable bouillion for the chicken base. In that case, I like to add a little fennel for added flavor. Alternatively, add a few ounces of chorizo or andouille sausage for a meatier flavorr. The spice level of this dish can be toned down or ramped up according to taste.
