6 cup Black Beans Canned
2 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1 medium (2-1/2" dia) Onions
6 pepper Peppers, Jalapeno
2 serving Tender and Tasty Boneless Skinless Breasts Chicken
16 oz Tomatoes Diced No Salt Added
4 cup Soup, Chicken Broth
2 tbsp Butter
1 tbsp Olive Oil
0.25 tsp Salt, Table

Recipe Directions for Black Bean Soup with Chicken Southwest Style

  1. Salt and oil chicken breasts

  2. Put chicken breast in oven at 400 for 20 min, flip after 10

  3. Shred the chicken and put away for the moment

  4. Dice peppers and onions

  5. Put butter in large pot with peppers and onions and sauté

  6. Add canned tomatoes and stir

  7. Add canned black beans and stir

  8. Add shredded chicken

  9. Add a pinch of cinnamon

  10. Simmer for an hour
