Another variation on the theme...black bean soup

Recipe Ingredients for Black bean soup 2.0

1 lb black beans
2 tbsp olive oil
1 onion
3 cloves garlic
4 tomatoes
1 tbsp lemon zest
1 tsp cumin
1 tsp salt
1/2 cup cilantro
3 green onions

Recipe Directions for Black bean soup 2.0

  1. add olive oil to pan

  2. saute garlic and onion

  3. add spices (cumin, chile powder, red pepper)...

  4. add tomatoes (fresh, diced)

  5. Add black beans (dry)

  6. add water (to cover completely)

  7. boil and then simmer until beans are tender (you may need to add additional water)

  8. add salt and lemon zest

  9. boil a bit more

  10. add cilantro and remove from heat

  11. puree everything and adjust seasoning

  12. add chopped green onion to garnish
