Simple, unconventional Sloppy Joe recipe. Not for everyone, but vegetarian/vegan and very healthy.

Recipe Ingredients for Black Bean Sloppy Joe

1 onion, chopped
1 green pepper, diced
1/2 cup water
15 ounce can black beans, low sodium, drained and rinsed
8 ounces tomato sauce, low sodium
1/4 cup quick-cooking oatmeal
1 tablespoon yellow mustard
1 tablespoon soy sauce
1 teaspoon chili powder

Recipe Directions for Black Bean Sloppy Joe

Place onion and pepper in saucepan with water. Cook, stirring frequently until the vegetables soften (about 5 minutes). Mash beans with a bean or potato masher. Add the beans and remaining ingredients into the saucepan and cook over low heat until heated through (about 5 minutes).
