A quick and easy dinner made from stuff in your freezer and pantry.

Recipe Ingredients for Black Bean & Shrimp Bowls

1 lb medium shrimp
1 1/2 cups black beans, drained, rinsed
3 tbsps lime juice
1 tsp chili powder
1/4 tsp salt
1/4 tsp paprika
1 tomato, chopped
1 avocado, chopped
1/2 onion, minced
1 clove garlic, minced
1 tsp olive oil

Recipe Directions for Black Bean & Shrimp Bowls

  1. Defrost shrimp and let sit for 20 minutes in the lime juice, salt, chili powder and paprika.

  2. Open a can of black beans, drain and rinse. Add the olive oil and garlic to a pan on medium heat and wait until you can hear the garlic start to sizzle. Add the shrimp and beans and heat through.

  3. Serve over rice with the chopped tomatoes, onions, and avocado.
