Makes 4 servings



Feel free to add any other spices you want, but be careful with the garlic--3-4 cloves is too much for some people.

Recipe Ingredients for Black Bean Salsa Soup

1 small onion, chopped
3 cloves garlic, minced
30 ounces black beans
1 red pepper, chopped
1 cup salsa
5 cups water
1 Cumin, salt, and black pepper to taste

Recipe Directions for Black Bean Salsa Soup

  1. In a pot, saute the onion in a bit of cooking oil spray until it turns translucent (add water if it begins to stick).

  2. Add the garlic and saute for another minute, or until the garlic begins to turn golden.

  3. Add the bell pepper and saute for another minute. Add the rest of the ingredients, bring to a boil, and reduce to a simmer.

  4. Cook for 20-25 minutes.

  5. Optionally, blend 1-3 cups of the soup in a blender or food processer and return to the pot for a creamier soup.
