A delicious and low-calorie spicy soup!

Recipe Ingredients for Black Bean and Salsa Soup

45 ounces Bush's black beans
2 cups chicken broth
1 cup salsa
1 1/2 teaspoon ground cumin
14 ounces canned corn
1 cup chopped onion
2 cup chopped celery
2 cup chopped carrots
1 teaspoon minced garlic
1 tablespoon olive oil
1 pinch cayenne pepper
1 pinch crushed red pepper
2 cup cooked chicken, cubed
4 ounces diced chiles
2 cups water

Recipe Directions for Black Bean and Salsa Soup

  1. Chop raw vegetables and saute with garlic in olive oil until onions are translucent and carrots are softer.

  2. I usually use half pinto beans and half black beans in this..you can use whatever you want. For some reason this calorie counter gives the calories on pinto beans wrong so I had to put black beans in to get the correct calories per serving.

  3. Take half of beans and put in blender with salsa (I used On The Border medium salsa which is awesome in it..I've never used a different salsa for this soup so beware of substitutions!) and chicken broth. Blend well. Add to pot with the rest of the beans, corn, and chicken.

  4. Add 2 cups water and simmer until carrots are soft and soup is thicker, about 20 to 30 minutes, stirring often, on medium heat or lower so as to avoid burning.
