Black bean and salsa rice. Makes a nice, portable meal.

Recipe Ingredients for Black bean and salsa rice

1 cup basmati rice, uncooked
1 cup black beans
1/2 cup salsa
1/3 red pepper
4 Tomatoes, Sundried, in Oil
1/2 cup Cheese, Finely Shredded Tex-Mex Blend
1 tbsp olive oil

Recipe Directions for Black bean and salsa rice

  1. Cook rice according to directions, using olive oil instead of butter.

  2. When rice is almost done, add salsa.

  3. Grill the peppers.

  4. Rinse beans, if using canned.

  5. Chop sundried tomatoes finely.

  6. Add beans, peppers, and tomatoes to rice mixture.

  7. Hotsauce to taste.

  8. Sprinkle with cheese (optional).
